These are not actually pudding at all, they are rolls. Traditionally it’s served with a beef roast such as prime rib, and the drippings are used in the recipe instead of butter.
Gluten-Free Yorkshire Pudding
1/4 cup butter (use Earth Balance if lactose intolerant)
1 cup of Gluten-Free Blend #1
1 cup unsweetened almond milk
1/2 teaspoon Himalayan Pink salt
1. Heat oven to 450°F.
2. Spread butter in each of the 12 holes of muffin pan; place pan in oven and heat until hot.
3. In medium bowl, combine flour, milk, salt and the eggs and whisk just until smooth. Divide between the 12 muffin holes in the hot muffin pan.
3. Bake 18 to 25 minutes or until puffy and golden brown (pudding will puff during baking and deflate slightly upon removal). Serve immediately.
Serve with Pot Roast or Vegan Lentil soup.
