I tend to go to Bob’s Red Mill for a Gluten-Free flour mix. Recently, I have been trying combination of other grain and bean flours (since I have acquired a few different types from frequenting Indian grocers.
I created a blend that has worked pretty well for most recipes I’ve tried it with so far.
Gluten-Free Blend #1
3/4 cup chickpea flour
3/4 cup white rice flour
1/4 cup sorghum flour
1/4 cup arrowroot starch
1/4 cup cornstarch
1Tbsp. xanthan gum
I created this blend to be a light, airy bread and roll blend. Especially, for Yorkshire Pudding.
