This vegan version of tomato soup has no cream, no tree nuts and is made from whole clean foods!
The cold weather had me thinking how nice grilled cheese and tomato soup would be. For someone with adverse reactions to gluten and lactose, that combo is not usually an easy thing to come by. I’ve not had much luck with gluten-free breadmaking. I can’t get those cheap cheese singles because of the lactose. They aren’t even real cheese anyways, right?!
Rudi’s Bakery is very generous and has sent me coupons to enjoy their bread for free. It is not vegan since it has egg whites, but it is gluten-free if you get the Rudi’s Gluten-Free Bakery loaves. I really liked the texture, especially when toasted or pan-fried. If you can’t have gluten, you can relate how nice it is to simply make a sandwich with bread that doesn’t make you sick!

I picked up a block of Lisanatti’s Almond Cheese. It is mainly made from almonds, but also contains casein (a protein from animal milk). I got the Jalapeño Cheddar Cheese, of course. I love peppers and spices! This cheese alternative with no lactose was good for grilled cheese.
Through this experiment, I learned I don’t have adverse side-effects to casein! I also realized it is hard to find a vegan cheese that is not made from soy or lactose-free option that is vegan.
On to this yummy tomato soup…
I am so happy that I made this and I can share this recipe with you. A few notes; I like my soup garlicky and spicy, if you don’t reduce the cayenne and garlic.
Creamy Tomato Soup (Vegan)
5 stewed tomatoes
3 cups water
2 Tbsp nutritional yeast
1.5 tsp garlic powder
1.5 tsp onion powder
1/2 tsp paprika
1/2 tsp cayenne
1/2 tsp thyme powder
1 tsp black pepper
Real salt, to taste
1) Blend tomatoes and avocado in processor with one cup of water for about 2 minutes or until creamy.
2) Pour the tomato-avocado purée into a saucepan. Mix in the additional water.
3) Add spices and stir in. Cover the pan and simmer on low for 20 minutes.
4) Optionally, can add a few tablespoons of non-dairy milk to thin if it’s too thick for you. A non-vegan addition that is good is a teaspoon of ghee.
Serves two. Best with grilled ‘cheeze’ sandwiches.
